Everything on Coal & Charis published for general information and education. We are grilling enthusiasts sharing what we’ve researched, not professional chefs, engineers, or safety inspectors. Our content is not professional advice, and you should use your own judgment — and, where it matters, a qualified professional — before acting on it.
Food safety
Cooking with fire and eating undercooked food both carry real risks. Any temperatures or techniques we mention are general guidance drawn from USDA food-safety recommendations, but you are responsible for cooking food to a safe internal temperature, confirmed with a thermometer, and for following the manual and safety instructions that came with your grill. When our guidance and your grill’s manual or the USDA differ, follow the manual and the USDA.
