What a kamado actually gives you
Three things, and it’s worth separating them because the marketing runs them together.
Fuel efficiency.This is the headline benefit and it is real. Thick insulated walls mean very little heat escapes, so a small charcoal load holds temperature for a long time. Where a thin-steel barrel grill might burn through a full chimney holding 250°F for three hours, a kamado can run most of a day on a similar load. Over a few seasons of regular cooking, that is a genuine ongoing saving.
Temperature stability.Because the walls store energy, a kamado rides through wind, rain and cold in a way a kettle doesn’t. Set it at 250°F and it stays there without you nursing the vents. This is what makes kamados excellent at low-and-slow.
Moisture retention.A tightly sealed ceramic or insulated chamber loses much less water vapor than a leaky one, so food — chicken especially — comes out noticeably juicier. This is the effect kamado owners talk about most and the hardest one to quantify.

Insulated steel vs ceramic: the real trade
This is the decision that defines the under-$500 category, and both sides have genuine merit.
Insulated steel(the Char-Griller Akorn line) uses a triple-walled body with air gaps as the insulator. It gets you most of the efficiency and stability of ceramic at roughly a third of the price and a third of the weight — a full-size Akorn is 97 lb where a comparable ceramic is well over 200. It heats up faster, because there’s less mass to bring up to temperature, and it’s far easier to move.
Where it loses is the very long hold. Ceramic’s thermal mass keeps radiating overnight in a way an air gap doesn’t, so a 16-hour brisket is easier on ceramic. Steel also dents where ceramic chips, and the painted exterior can eventually corrode at the seams if it’s left uncovered.

The accessory you must budget for
A kamado cannot do indirect cooking without a heat deflector — a ceramic or steel plate that sits between the fire and the food so the chamber convects instead of radiating straight up. Without one, a kamado is only a very efficient direct-heat grill, and every low-and-slow recipe you read will be impossible.

Use lump charcoal, not briquettes
Kamado makers recommend lump over briquettes and they are right, for two practical reasons rather than snobbery.
First, ash volume. Briquettes contain binders and fillers and produce considerably more ash than pure hardwood lump. In an open kettle that’s a nuisance; in a kamado, where all your air comes through a small bottom vent and up through the coal bed, accumulating ash progressively strangles the fire. On a long cook that shows up as a temperature you can’t hold no matter how far you open the vent.

The honest alternative: just buy a kettle
