It is here because the value argument for an offset is not the purchase price — it’s whether the pit can hold a temperature without fighting you. Below a certain amount of steel, an offset cannot, and everything you save you pay back in ruined cooks and bags of wood.

The Longhorn is where that stops being a problem. It is also a genuine stick burner that will ask for your whole Saturday, which is the reason most readers of this page should buy something else. What the four baffles actually do

The Longhorn is a reverse-flow pit. Under the cooking grates sit four steel baffle plates. Heat and smoke leaving the firebox are forced to travel beneath those plates to the far end of the chamber before turning and coming back across the food, exiting through a chimney mounted at the firebox end.

The point of that detour is evenness. In a traditional offset, heat crosses the food once on its way from firebox to chimney, so the rack nearest the fire runs substantially hotter than the far rack and you spend the day rotating meat. The reverse-flow baffles absorb heat along their whole length and radiate it upward more uniformly, so a full load of ribs comes out together.

Oklahoma Joe’s also lets you move the stack, which converts the pit to traditional flow. That is a genuinely useful piece of design if you ever want to run it hot and dry for grilling, or if you simply prefer the traditional behavior — you are not locked into one configuration by the purchase. 226 pounds is the specification that matters

Every good property of an offset comes from thermal mass. Thick steel takes a long time to heat up and an equally long time to cool down, which is exactly what you want from a cooking chamber: a gust of wind, an ambient temperature drop, or opening the door to spritz a brisket barely moves the needle, because the metal itself is holding most of the energy.

That is short for a purchase of this size — the Laredo 900 states two years, and Weber states ten on its kettles. It is not a sign the pit will fail; heavy steel offsets are simple objects and the failure modes are cosmetic rust and gasket wear rather than component failure. But it does mean you are relying on the steel rather than on the company, and you should read the current listing terms yourself before buying, since warranty terms change.

It is a stick burner. This is not a criticism, it is a description, and it is the most important sentence in this review. A reverse-flow offset wants a split of hardwood every 30 to 45 minutes for the whole cook. A twelve-hour brisket is twelve hours of tending a live fire. There is no version of this cooker that you set and walk away from.

For some people that is precisely the appeal — it is a craft with a long tradition and results you cannot quite reproduce any other way. For others it is an expensive discovery. Running it: the short version

  • Start with charcoal, run on wood. Build a bed of lit charcoal in the firebox first. It gives you a stable coal base that keeps subsequent splits burning cleanly rather than smoldering.
  • Small, hot fire — not a big smoldering one. Thick white smoke means a starved fire and bitter food. Thin blue smoke means you got the airflow right. When in doubt, open the firebox vent.
  • Preheat the whole pit. With this much steel, an under-heated chamber will steal energy from the fire for an hour. Give it 45 minutes before the meat goes on.

Who should buy it

Buy the Longhorn if you already know you enjoy fire management, if you cook for a crowd often enough to want 1,060 square inches, and if you want a pit that will still be cooking in fifteen years with a bit of care and a cover. It is the cooker to buy once.

Do not buy it as a first smoker. Do not buy it if you want to put meat on at 10pm and go to bed. Do not buy it if the patio is small — this is a large, heavy object that does not move once assembled.
