How to Use a Kamado Grill

A kamado holds heat so well that the habits that work on a kettle actively work against you here. Lighting, creeping up on a target temperature, cooking indirect, and shutting down.

Everything you learned on a kettle is slightly wrong on a kamado. That is the single most useful thing to understand before your first cook. On a kettle you light a full chimney, tip it in, and adjust from there — the grill is thin, it responds quickly, and mistakes correct themselves. A kamado has thick insulated walls that store an enormous amount of energy, and once those walls are hot, they do not want to be anything else.

The practical consequence is that a kamado is very easy to run at a rock-steady temperature and very hard to changethe temperature of. So the whole technique is about arriving at the number you want rather than correcting your way to it. Get that right and a kamado is the least demanding charcoal cooker there is; get it wrong and you’ll spend an hour chasing a gauge that won’t settle.

Clean the ash out first — every time

This is the most commonly skipped step and the most common cause of a kamado that won’t hold temperature. A kamado draws all of its air through one bottom vent and up through the coal bed. Ash sitting in the bottom is a filter across that path, and as it accumulates the fire gets less and less air no matter how far you open the vent.

Symptom: your grill held 250°F beautifully last month and now sags to 180°F with the vent wide open. Cause: ash. Fix: empty the pan and sweep the bottom vent clear before every single cook. It takes thirty seconds.

Light small, and wait

Fill the firebox with lump charcoal— briquettes make too much ash for a kamado, for the reason above. Fill generously; unburnt lump costs you nothing because you’ll reuse it, and refueling a kamado mid-cook is genuinely awkward.

Then light one small spot. A single natural fire starter in the center, or a small handful of coals from a chimney— not a full chimney load. You are not lighting a fire; you are planting one and letting it grow to the size you need. Leave the lid open for eight to ten minutes until a small area is properly glowing, then close it with both vents wide open.

The 50-degree rule

This is the whole technique in one line: start closing the vents about 50°F below your target.

Aiming for a 250°F low-and-slow cook? Start restricting the bottom vent when the gauge reads around 200°F. Aiming for 350°F to roast a chicken? Start closing down at 300°F. The grill will keep climbing after you restrict it, because the walls are still absorbing and re-radiating energy, and it will coast gently up to roughly where you wanted to be.

If you wait until the gauge hits your target before touching the vents, you will overshoot — often by a hundred degrees or more. And bringing a hot kamado downis slow: closing everything down might shed 100°F in half an hour, during which the food you put on is cooking at the wrong temperature. Prevention is the only good strategy here.

Small adjustments, long waits

Once you’re in the region, control with the bottom vent for coarse changes and the top ventfor fine ones. Move them in small increments — a quarter of an inch on the bottom slider is a meaningful change — and then wait ten to fifteen minutes before deciding whether it worked.

The mistake is treating a kamado like a hob. You make a change, nothing happens for five minutes, so you make a bigger change, and then both changes arrive at once and you’re fifty degrees the other way. Patience is genuinely the skill here, and it is why experienced kamado cooks look so relaxed: they set it once and stop touching it.

Direct, indirect, and the deflector

With no deflector, a kamado is a radiant direct grill — excellent for steaks, chops and anything you want a hard sear on, especially since it will happily run past 600°F for that. With the heat deflector plate in, it becomes a convection oven: heat rises around the plate and circulates, and nothing is exposed to direct radiant heat from the coals.

Anything cooking longer than about half an hour wants the deflector in. Ribs, pork shoulder, brisket, whole chickens, roasts, pizza — all indirect. Burping: the safety step

Above roughly 400°F, never open the lid in one movement. A hot kamado is an oxygen-starved chamber full of hot combustible gases, and throwing it open pulls a rush of air across the coals that can send a flame straight up and out. The term for the correct technique is burping: crack the lid an inch or two, pause for two or three seconds while the pressure equalizes and that first rush of air is spent, then open fully.

Do it every time above searing temperatures, keep your face and forearm back while you do, and wear proper gloves. This is one of the few genuine hazards specific to kamado cooking and it’s entirely avoidable.

Shutting down and saving your fuel

When you’re done, close both vents fully. The fire runs out of oxygen and goes out, and whatever lump hasn’t burnt is still there for next time. Over a season that reusable charcoal is a real part of why kamados are cheap to run.

Let the grill cool with the vents shut and don’t be surprised if it is still warm hours later — that is the insulation doing exactly what you paid for. Before the next cook, stir the leftover lump, clear the ash from underneath, top up with fresh, and start again.

Temperatures that matter

A kamado’s stability makes it easy to forget the food. The numbers don’t change because the grill is fancy: 165°F for all poultry, 160°F for ground meat, 145°F with a three-minute rest for whole cuts of beef, pork and lamb, per USDA guidance. Tough cuts like pork shoulder go far past that, to roughly 195-205°F, for tenderness rather than safety.

The kamado lid gauge is no more accurate than any other lid gauge — it reads dome air, not grate temperature. Run a two-probe thermometer with one probe at grate level and one in the food, and trust that instead.
